I love beetroot, especially in a salad with creamy goat’s cheese, so I thought I would knit one to use up some leftover yarn. Beetroots are also known as Beets in US English. Knitted veggies make super toys to encourage little ones to eat veg and greens, or you can use them as decorative items in your home. I have been working on a box of different vegetables, and if you are new to making knitted toys these make an easy introduction to the craft as they don’t have too many pieces to sew together. My knitted veggies are worked flat on straight knitting needles, but most pieces could easily be converted to knitting in the round if that is your preference. The finished beetroot is approximately 7cm wide x 17cm tall (including leaves) .
